BIT is the verb in the past form.

For example:

"That dog bit me last week."

"I felt a pain in my tooth when I bit an apple yesterday."

BITTEN is the verb in the perfect tenses.

For example:

Present Perfect: "This dog has bitten me in the past, and I'm afraid it will do it again!"

Past Perfect: "She had bitten into the cookie before her teeth started to ache."

Future Perfect: "By the end of this evening, I'm sure you will have bitten all your nails!"
